White’s is the oldest gentleman’s club in London, founded in 1693. The restaurant kitchen is located on the fifth floor, which made removing the existing kitchen and delivering the new equipment an interesting challenge!
All the equipment was manufactured in sections and assembled on site. To get equipment in and out, we needed to close the road and the use cranes. A platform was built for the equipment to land on, before being taken into the building through a window.
The design work involved altering the flow of the existing kitchen by creating a central island cooking suite, and central prep/pass counter.
The bulk of the cooking appliances were positioned along the rear wall, with preparation areas to the rear. A separate pastry area together with a new coldroom were also created.
The complete fit-out programme was completed during the summer recess. A temporary facility was used during this period to reduce the disruption for the Club’s members.
