In pub kitchens this includes ensuring an optimal workflow from delivery and storage, through preparation and cooking, to service and wash-up. In bar areas, as well as optimising storage and workflow, presentation is a key factor – customers must be able to see the products in your fridges, for example.
Our work at Bath Ales’ two ‘Graze’ venues in Bath and Bristol is a good illustration of these considerations.
Bar and kitchen design case study: Graze
The task in both locations was to create highly visible kitchens, but the two sites could not be more different – Bath featured spacious, modern premises built specifically as a bar and restaurant, while Graze in Bristol was much smaller, located in the converted city-centre Post Office.
In Bath, the kitchen area was designed with open plan cooking and preparation with the storage and dishwashing to the rear out of the customer’s sight. A striking island-style bar was situated centrally in the restaurant, serving draft and bottled beers.
The concept from the Bath project was carried over into the refurbishment of Bristol, and while the space was far less, an open-plan kitchen was still achieved.

How GLS design a bar or kitchen for your licensed premises
Our work starts with a meeting to gain an overview of your project, including your operational requirements, budgets, and the building or area within it where the kitchen or bar is to be located.
We’ll develop an initial CAD layout, with options where applicable, and discuss this with you in detail. A more in-depth CAD layout would follow, with an equipment legend and an itemised quotation.
Once costs are agreed and options chosen, a comprehensive services layout is produced detailing the mechanical and electrical requirements.
GLS support you right through to completion… and beyond
Whether you would like us to undertake the installation, or whether you already have an installation team in place, we can provide a designated project manager who will attend meetings, and will liaise with architects and contractors.
Further to completion, we perform a thorough handover, furnishing you with operational manuals and certificates, and arranging equipment training if required.
And once everything is up and running, we’re always just a phone call away if you’ve questions or further requirements.
